"Spanakopita" Pizza

Oh how we Love Greek cheese! This pizza highlights two of our favorites - Dodoni Feta and Parnassos Kasseri Cheese!  This delicious dish, is a spin-off of the classic Greek pastry, Spanakopita.

Ingredients

1 ball Pizza Dough, homemade or store bought

2 Tbsp Fondo di Toscana Organic Extra Virgin Olive Oil 

1/4 Cup Krolowa Kuchni maka pszenna Type 390 (or All Purpose Flour)

Ingredients for Spinach Sauce

2 Cups Fresh Baby Spinach, washed

3-4 Cloves Garlic, minced

2 Tbsp Parmesan Cheese, Grated

1/3 Cup Fondo di Toscana Organic Extra Virgin Olive Oil

Salt & Pepper, to taste

Ingredients for Pizza Toppings

1 small Onion, diced small

1 medium Tomato, medium Dice

2 Cups Parnassos Kasseri Cheese, grated (approx. half a small round)

1/2 Cup Dodoni Feta Cheese, crumbled

Prepare the Pan and Dough

  1. Preheat Oven to 425 - 450 degrees (depending on recommended cooking temperature of your chosen dough)
  2. Prepare pan by greasing the pan with the 2 Tbsp of Olive Oil. A paper towel can help to spread the oil evenly across the entire pan. Pay careful attention not to forget the edges.
  3. Dust flour over greased pan, and gently shake to coat. Empty any excess flour from the pan.
  4. Slowly stretch the dough by hand to the diameter of your pan, and then place in your prepared pan (Do not stretch dough too much in the pan, or all of the greasing and flouring won't prevent the dough from sticking!)

Prepare the Spinach Sauce

  1.   Add the Spinach, Garlic, Parmesan, and Oil in a blender, and blend until smooth.  Add Salt & Pepper to Taste.

Prepare the Pizza

  1. Spread Spinach Sauce on prepared dough.  Leave about 1/2 inch of space from the edge of the dough.
  2. Sprinkle diced Onions and Tomatoes evenly across the pizza.
  3. Evenly coat with the grated Parnassos Kasseri Cheese.
  4. Sprinkle on the crumbled Dodoni Feta evenly.
  5. Bake for 20-25 minutes, until top is golden brown, and your crust is cooked through.  Depending on your oven, I would recommend rotating your pizza about half way through the cooking time, just to make sure that it cooks evenly. 
  6. Allow to cool slightly, slice, and Enjoy!
